i am a chef and am in the process of researching my next venture. i am looking into a strictly grilled style pizzeria and when i make my grilled doughs i brush a flavored oil on them such as garlic and thyme. it gives the dough a bold flavor to start my pizza, and great color. it also cooks twice as fast with the oil on. then after i top the pizza and bake in the oven for a couple of minutes i usually add some fresh herbs to finish it off. try it it will def be better then her grilled pitas lol!
