ok, this has to be one of my greatest pet peeves about cooking that I hear from people: that pork, specifically pork chops, has to be cooked to just under well-done. LIES!!! If you get good, reputable pork from a supplier you trust has handled it cleanly and safely, pork can be cooked to medium-rare. I repeat, PORK CAN BE, AND SHOULD BE, COOKED TO MEDIUM RARE! We are no longer in the days of having to worry about tricinosis from ill handled pork, and pork is NOT like chicken (which I cook to mid-well for myself), it does not need to be white all the way through! try having a nicely seared, medium-rare pork chop, and you will see that it is as juicy and tender as you can possibly get it.
