I'm really glad to see Good Eats FINALLY making it to Hulu. I happen to have this episode taped off the TV, but this is much more convenient, and helps support the fine folks who make the show in the first place.
This is exactly the way my Japanese teacher taught me how to make sushi rice, and it really does turn out well every time. But I have to disagree with Alton about the rice cooker. The thing about them is, you almost never make rice and nothing else. Usually you've got other dishes coming, and you just don't have the time, space on the stove top, or spare mental capacity to make a pot rice. I load mine up, plug it in, and stash it in the corner on the floor. It cooks, switches to "warm" when it's ready, and I can focus on the other dishes - particularly something like a stir fry that requires a great deal of concentration. And it's not exactly a unitasker, either: it's great for making one-pot rice-based meals, like pilafs, or put fish and frozen vegetables on top before cooking so that it all comes out at once. (Don't add sauces or salt until afterward, though, as they interfere with cooking)
