The difference is in the environment. The more northern lobster grow in a colder water and feed on different sources of food. Most Maine lobster is also soft shell making it more fibrous and easier to extract from the shell. Maine also has weight limits, catch limits and a better sustainable process. There is not only a taste difference (Maine tend to be sweeter,) but a difference in the way the Lobster's environments are preserved and the harvest sustained.Lastly, retailers are required by law to disclose the country of origin for seafood.
