this video was not as bad with misinforming people as some of their other videos, such as cutting off the rubber bands so that they do not effect the flavor of the lobster while boiling (which some would think this is a no brainer.... but.....). But again, it was completly obvious that they over cooked their lobster, when they showed the hands rubbing off a layer of white "substance" off the claw meat. What that actually is is the over coagualted protein and fat forced out of the over cooked claws. Also, you could tell the tail was over cooked by the way the meat acted as it was being cut. There was a sense of "rubbery-ness" to it, which is not good at all.Lastly, I just wanted to point out what they considered an "ice bath" was nothing more than a couple cups full of water and a few ice cubes. A true ice bath should be twice as much ice and water as the item(s) to be submerged, and should have a high ratio of ice to water, as it is, of course, and ICE bath. the purpose is to get it as cold as possible, as quickly as possible.
