I have never seen this show before and now I am going to watch the rest of the episodes!
Chef Ripert is as casual as he is informative and precise, which makes him an excellent guide and narrator. The walk-through of the kitchen in this episode did a great job of explaining the various stations and roles of the employees.
Many TV chefs avoid explaining WHY things are done the way they are done. Or, they focus on simple explanations that aren't very useful beyond the recipe they're making at the moment.
Hearing that many people in France used to enter culinary school even though it was not their first choice was very interesting to me. Most Americans perceive chefs as celebrities with highly specialized skills, which are hard to master. Chef Ripert encourages me to think I can do much more than I previously believed.
If each episode ends with a dish preparation just like this episode, I would make a point of watching it each time.
