Max T., I couldn't disagree with you more. I am a Yankee, but my mother has Southern roots and I have family who still lives in the South. I also attended law school in the South. Paula Deen hasn't a hint of having let it go to her head. If you've seen her in person, you'd know that. She is the most calming and comforting presence on Food Network. The meals she cooks are traditional foods that I grew up on, given that my mother's roots are Southern. If you don't like how much butter she puts in a dish, cut it back or substitute canola oil or olive oil. If you prefer your foods not be fried, don't fry them. Frankly, Paula's food in moderation and in variety is probably a lot healthier than what most people are eating at fast food drive thrus and grabbing on the go every day. My mother cooked this way and not a one of us is overweight. It's about portions, moderation, variety and moving your butt. I believe that the fewer steps an ingredient has taken from the earth to my table, the better it is for me. I'll eat butter over goofy margarine any day.

Paula Deen is doing what she does best, and she's living authentically and lovingly. While doing that, she is keeping a tradition going of great food, and the comfort of sharing it with family. Perhaps what you've suggested is a great idea for some young whipper snapper, to modify the traditional Southern recipes to taste like they used to but provide less empty calories and more nutrition. Frankly, the entire country with few exceptions could use a little moderation in what we all eat for our health's sake.
Healthy food can be in the eye of the beholder. Some things are clearly unhealthy, like fried mac n cheese, but there are many Paula favorites that are nutritious and just as tasty!
Our mothers and their mothers told us if you don't have anything nice to say, then don't say anything at all. Would you be embarrassed of that as well?
Paula Deen can change my day and my mood. She makes me smile and she inspires me to do one of the things I do best, cook. We should all be cooking and sharing our kitchen with family.
